ice cream sandwich recipe!

I am always one to order an ice cream sandwich at the ice cream truck, so when I got an ice cream maker a couple weeks ago, I knew I had to try to make some from scratch! After making  bunch of different ice cream flavors, including peppermint, peanut butter, and cookie dough, I decided that vanilla malted milk is the best. I decided to pair it with something a little funky- so, I made regular chocolate chip cookies but added crushed potato chips for a little salty crunch. Perfect for, like, whenever! 

Chocolate chip cookie w/ potato chips

- 1 cup of butter, softened 
- 1 cup of white sugar
- 1 cup of brown sugar 
- 2 eggs 
- 2 teaspoons of vanilla 
- 3 cups of flour 
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt  
- half a bag of milk chocolate chips
- small bag of potato chips, crushed
- half a bag of mini semi sweet chocolate chips

Preheat oven to 350 degrees. With a mixer, blend the softened butter with the two sugars. Add eggs one at a time, then add the vanilla. Add baking soda and salt. Stir in flour, then add the milk chocolate chips and crushed potato chips. With an ice cream scooper, place dough on cookie sheets lined with wax paper. Cook for 10 minutes. 

Vanilla malted milk ice cream 

- 1 1/2 cups of whole milk
- 1 cup of white sugar
- 3 cups of cream
- 1/2 teaspoon of salt
- 1 tablespoon vanilla
- 1/2 cup of malted milk

With a mixer, blend the sugar and milk until the sugar dissolves. Slowly add the cream, then salt, vanilla, and malted milk. Pour into ice cream maker and follow the maker's timing instructions. I used a Cuisinart, which took 25 minutes to thicken.


Once ice cream has frozen overnight and the cookies have cooled, put one scoop on an upside-down cookie, and place a right side up cookie on top of the ice cream. At this point you can serve as is, or you can roll the sides of the sandwich in mini chocolate chips or any crushed candy. Enjoy, and don't forget to have napkins handy!

Yesterday my friend Isabella ( izzaroze ) and I cruised around on Melrose- we visited the obligatory Alfred's coffee and Compartes Chocolate (peep the neon!), the new Nastygal location, and hit Ink.Sack for delicious sandwiches! We didn't coordinate outfits but we both showed up wearing very dreamy palettes of powder pink, white, gold, and pearlescent. Whoever said these colors were only for the Spring was wrong- Isabella and I kept it winterish with solids, sleeves, and close-toed shoes. No matter the time of year, wearing a dreamy palette is is super fun and super chic.
